A Message from Takeshi Sekigawa, Founder of THE JAPAN EDIT
My name is Takeshi Sekigawa, and my journey with Japanese tools began over 26 years ago.
At the age of 18, I started my career in a traditional Japanese restaurant in Nara. It was there that I first learned the most fundamental lesson of Japanese cuisine: respect for the ingredients begins with the right tools.
In 2010, I brought my passion for cooking to Sydney, working at the legendary Gumshara Ramen. By 2015, I was launching new ramen concepts as an Executive Chef, and I have spent the years since developing and operating multiple successful restaurants across Sydney. Even today, you will still find me active in the kitchen, where the heat and the pace never stop.
A Bridge Between Two Worlds
In 2020, during the global pandemic, I returned to Japan for two years. This time was a turning point. I worked closely with a long-established supplier in Osaka and built direct, personal relationships with master craftsmen and manufacturers across the country.
Seeing the dedication behind every blade changed how I viewed my tools. I realized that these extraordinary instruments shouldn't be reserved only for professional kitchens.
Now, back in Sydney, I have created THE JAPAN EDIT (TJE) to bring that professional-grade quality to your home.
